This spicy and savoury soup is packed with flavour, and is quick and easy to make.
– 1 lb chopped chicken thighs
– 1 or 2 tbs Raphael’s Gourmet Pepper Sauce (adjust according to desired heat level)
– 1 tbs chopped ginger
– 4 x 1″ cuts of lemongrass
– 750 ml of coconut milk
– pinch salt
– 1 tbs shallots (optional for garnish)
Mix pepper sauce and chicken in a bowl and let stand while prepping other ingredients.
Sauté lemongrass, ginger and shallots in oil. Add chicken and continue to sauté.
When chicken is half cooked, add coconut milk and lower heat to simmer for 10 mins. Add salt to taste. If the soup becomes too thick you can add water to thin it out to desired consistency.
Servings: 2 – 3 (small/starter bowls)
